Ingredients
- 2 cans Yams (40oz)
- 1 Cup Water
- ½ Cup Triple Sec (Optional)
- 1 cup Sugar
- 1 cup Brown Sugar
- ¼ lb. Butter (1 stick)
- 1 ea Lemon (Sliced)
- 1 tbsp Cinnamon
- 8 oz Small Marshmallows
- Salt and pepper to taste
Method
Pre-Heat oven to 350 degrees
Over Medium heat in large skillet, melt butter , adding sugar , water (and triple sec), seasoning and lemon. Cook for 15 mins. While cooking, drain yams from all water in can then place in ovenable dish. Pour over glaze from skillet over yams and top with marshmallows. Place in oven for 25-30 min till marshmallows are browned and yams heated through
Bacon Sausage Dressing
Ingredients
- 12 oz Best Choice Dressing Mix (or Homemade Corn Bread Crumbled)
- 2 med Onions, Chopped
- 2 med Peppers, Chopped
- 2 lbs. Bacon Pork sausage (Or your choice of sausage)
- 1 -2 cups Chicken Stock
- ¼ lb. Butter
Method
Over Med-High heat, Melt butter and add vegetables cook for 5-7 mins then add sausage and brown off for approx. 7-8 mins. Once sausage is browned add in dressing or cornbread. Stir together and slowly add stock DO NOT ADD ALL AT ONCE!. Depending on the dressing mix all the stock may not be required. Once combined reduce heat to low and cook for additional 10 mins(May require additional stock if too dry).
